Learning Pressure Cooker Terms

Do not stir. This first term refers to the fact that some things like tomatoes tend to burn easily if over a high heat source. So many recipes will direct you to add them last and do not stir. Pressure cookers come to the correct pressure over high heat.

Lock the lid in place. It may seem silly to remind you of this, but you would be surprised at the number of people who put in the food, turn on the heat, set the lid on top and don't realize they have not locked the lid on. Pressure will not be attained if the lid is not locked. See your manual for instructions on how to do this.

Bring to high pressure. After you have put your ingredients in the pan, (don't forget the requisite amount of liquid) place it on the stove on a burner the same size or just a little smaller than the pan, but not bigger.

Turn the heat to high. It takes about 5 minutes for an average amount of food to come to high pressure, but if the pan if filled to the recommended limit it can take as long as 20 minutes.(Never fill the pan more than the recommended limit )This is especially true if you are using the pressure cooker to home can food. Time used to raise the pressure is not included in the cooking time in the recipes.

Reduce heat. After the correct pressure has been attained, lower the heat so that you maintain the pressure. This can be a little tricky as every stove is different and a little trial and error will let you know how much to lower the heat. I won't take long before you will just automatically lower it to the correct temp.

Quick release the pressure. This means just what it says, release the pressure quickly. This stops the cooking process and keeps things from being overcooked. The best way to do this is to put the pressure cooker under cold running water. DO NOT DO THIS WITH AN ELECTRIC PRESSURE COOKER. Using a fork or tongs move the pressure regulator gently to the side and release the steam. Be careful! Do not put your face over the pressure regulator, steam burns hurt!! When the pressure returned to normal you may open the cooker. This method is most often used with vegetables so as not to over cook them.

Natural pressure release. When a recipe calls for natural release it means turn off the heat and let the pressure come down on its own. This method is often used with meats to allow them to finish cooking after you turn off the heat. This usually takes about 10 minutes, but can take up to 25 minute. With a huge canner it can take an hour or more, but hopefully you will not be using that for dinner!!

These are some of the most common terms you will come across when using your pressure cooker. Be sure to read all the directions in the manual that comes with your cooker and you will soon have healthy meals for you family that save time and money and taste wonderful.

Buying a New Pressure Cooker? Where to Start?


As I search the Web for information about pressure cookers, I see threads and inquiries about what kind and size of pressure cooker to buy, what characteristics to look for, pricing and so on. Once convinced that this kitchen helper would be a good item to own, the next problem is how to choose the right one for your needs.

I chose a pressure cooker set. What I got was a four quart pot and an eight quart pot with two lids. One of the lids is used on either pot for pressure cooking and the other lid, a clear, tempered glass is used on either pot for regular or ordinary cooking. This eliminates the need for another set of pots in the kitchen and the challenge of adequate storage space as well.

I like the smaller pot because I live alone and cooking for one is not always fun. I always seem to wind up with too many left overs. At least the smaller pot allows me to cut recipes in half and still savor a good, hearty stew on a cold winter day.

The larger pot is wonderful for making a dessert where you insert another container into the pressure cooker and still need space around the inside container to allow the pressurized steam to do its job. It's great for making a big batch of stew or chili or even giant size corn on the cob. Remembering that rice and beans tend to froth and that with these foods the cooker should not be filled to more than one-half of its capacity... a larger pot makes good sense.

The eight quart pot can be used as a canner for smaller jars. Unless you're into canning the produce from a whole garden or tons of vegetables and meats to last a whole winter, this combination of pots may be all you need for your lifestyle. You'll have the pressure cooker that will do the job and the correct high-level heat of 240 degrees or more to be sure to remove any health hazard.

The set I bought has two temperature settings - a low and high - allowing you to pressure cook delicate foods such as desserts or fish at a lower temperature and veggies and stews or roasts at a higher level.

Safety is always a concern. Keeping the pots clean and the vent holes clear will assure safe, easy performance. Today's models usually have two or three safety valves.

And pricing! Don't think "cheap" when considering this purchase. Prices for a good, stainless steel pressure cooker range from $60.00 to $200.00. You will use this cookware often, and expect it to last a lifetime. Quality and dependability are worth the investment.

These are tough times and many of us are growing our own food. Home gardens number more than ever. You can find gardens every where. People seem to be using any available ground to grow vegetables and fruit. I have seen gardens on roofs and balconies as well as the more familiar back yard. Community gardens have grown in number as well. Some very "up-scale" condominium complexes have community gardens. On the other end of the scale, you can find these gardens in low income neighborhoods as well.

I live in Hawaii and I have a South facing lanai that gets very hot, so my garden consists of mostly herbs that can tolerate the heat. However, our complex does have a community garden near the office. We do grow our own tomatoes on the lanai.

So with all this food being grown in your own back yard, whatever it may be, what are you going to do with all that excess produce? Well you could give it away and that is a good choice, but have you ever tried to give zucchini away? Everyone has zucchini at the same time. You could give some to the local food bank again even they can only use so much fresh produce. The logical thing is to preserve the bounty for use later.

There are several ways to preserve food. Freezing and dehydrating are two good ways to do this and in a later article I will discuss each of these methods. But for this article I would like to focus on home canning using the pressure cooker. The only safe way to preserve low acid foods such as most vegetables, meats and fish is to use a pressure canner. This is just a large pressure cooker.

You can home can almost anything. Tomatoes are one of the things that almost everyone puts up. They don't need to be pressurized but can be put up using the water bath method if you add a little lemon juice to each jar.

When using the pressure canner it is important to follow the directions to the letter. This is not a time to take short cuts or guess at what you are doing. Always use proper equipment. Mason jars and new lids are the only kind of jars you can use safely in a pressure canner. Do NOT reuse the lids, they will not seal properly and you could lose your food. Never taste low acid food right out of the jar, bring it to a boil for 10 minutes before tasting. I know this sounds like a long time, but there is always a small chance of spoilage so be careful. Just know that I have been putting food up for many years and have never had a bad batch.

Besides the obvious vegetables, I make a huge pot of soup and divide it into pint jars and process it for later. Nothing tastes better than soup made with fresh vegetables right out of the garden and the next best thing is your home canned soup made from fresh vegetables. Tastes really good in the middle of winter.

Sometimes you can get a real deal on fresh produce during the peak season and canning is a way to have it in the winter. Peach cobbler is so good made with your home canned fresh peaches. By the way, you do not have to add sugar to your fruit when you can it. Just use the fruit juice and it will be wonderful. Also you can control the amount of salt if any in your canned vegetables.

All American Pressure Canner and Cooker - What Is the Difference?


When people hear about or see an all American pressure canner for the first time, they sometimes easily mistake it for the pressure cooker. They do look quite a bit alike which makes people wonder what the difference is if they are not familiar with kitchen appliances. Basically, they both operate on the same principle of using pressure to do their job. However, the canner simply heats the food to kill bacteria and prepare it for storage, where the cooker is used to completely cook food in a quick manner.
